Oats Rava Ladoo Recipe | How to make Oats Rava Ladoo



Oats Rava Ladoo is a delicious yet simple sweet dish to serve. It's easy to make & consumes very less time in making. This ladoo consists of oats, sooji for the grainy texture, sugar & other few ingredients to make it flavorful. There are different variations in oat ladoo's, but today I'm sharing the easiest recipe here. Make & enjoy this dish for Sri Rama Navami.

Serves -14 Ladoo's

Oats Rava Ladoo Recipe 
Ingredients
  • 1Cup Oats
  • 1/2Cup Sooji
  • 1&1/2Cup granulated Sugar
  • 1&1/2Cup grind coconut
  • 1/4Cup ghee
  • 2Tsp elachi/Cardamom powder
  • 1/4Cup Cashews
Cooking Directions
  1. Grind sugar to smooth powder & keep aside.
  2. Heat pan with 1Tbs ghee. To that add cashews & fry them to light brown in color. Transfer them to a bowl.
  3. Next add 1tbs ghee to pan. Add in oats & fry them on low heat while stirring continuously. Oats should turn to light brown in color. Switch off heat & transfer them to a bowl.
  4. Now add 1Tsp of ghee to pan. To that add sooji & fry it on low flame for few seconds. Once you can feel the nice aroma while frying sooji, switch off heat & transfer it to a bowl.
  5. In a big bowl take oats, sooji, sugar, coconut, elachi powder, fried cashews & left ghee.
  6. Now mix them well using your hand or a spatula. Rub ghee to your palm & scoop up a little mixture to form ladoo.
  7. Make ladoo's with rest of the mixture. Store them in a air tight container for freshness & enjoy them.

Peanut Butter Mug Cake

Peanut Butter Mug Cake is a simple treat for one which can be made in no time. I love these mug cakes as they are easy to bake & at the end you don't have any left overs to deal with. I used chunky peanut butter in this cake. For every spoonful of cake you get crunchy peanuts, which also gives a good bite to the cake. It's a perfectly soft & crumbly cake. Give it a try, sure you will be hooked. 
Prep Time-5mins or less
Cook time-1&1/2min
Serves-1mug cake 
Ingredients 
4Tbs all-purpose flour
3Tbs sugar 
4Tbs milk 
2Tbs chunky peanut butter
1/4Tsp baking powder
Pinch baking soda 
Few choco chips 
Directions 
- In a mug add flour, sugar, baking powder & soda. Lastly add milk & peanut butter to mug. 
- Whisk batter to a smooth paste. Top with choco chips on top.
- Microwave for 1&1/2mins on high. Cake will be fluffy & raised.
Note
- If you are someone like me who love mildly sweeten cakes, then reduce sugar to 1&1/2Tbs.

Chocolate Cake | Eggless Mini Cake

Chocolate Cake, the most delicious cake has been around for many decades was originated in America. Cake's are delectable & when it's a chocolate cake you can never stop with one bite. Cake's are perfect to serve for any occasion. They come in different sizes, I mean you can manage the portions & can control the unnecessary munching of it. I love to enjoy a small portion of it & I decided on making a small cake for my sweet cravings. You can bake or microwave this cake. I prefer to microwave rather than oven for the convince & with microwave you can enjoy the cake in no time.

Prep Time-10mins 
Cook Time-2mins
Serves-2 people 
Ingredients 
4Tbs all-purpose flour
6Tbs brown sugar 
4Tsp cocoa powder 
1/4Tsp baking soda 
1/4Tsp baking powder 
Pinch of salt 
4Tbs butter @ room temperature
6Tbs milk {add it as needed}
4Chocolate pieces to layer
Powdered sugar & strawberries for garnish
Directions
- In a bowl sift flour, sugar, cocoa powder, baking soda, baking powder & salt. Mix them well. 
- Add in butter. Next add in little by little of milk to form a smooth batter. Mix it well. 
- Grease a bowl with butter. Layer the chocolate pieces. 
- Pour in batter & microwave it for 2mins. 
- Allow it to cool off before transferring to a plate. Loose the ends of cake using a spoon & flip it on to a plate. 
- Garnish with powdered sugar & strawberries or as you wish. 
Note
- Cooking time varies with microwave.  
- If using white sugar, add in 5Tbs & add more if it needs.

Mango Sago

Mango Sago is a identical twin of Hong Kong's Mango Pomelo Sago dessert. I missed pomelo garnish on top as I could find them so named the recipe as Mango Sago. Pomelo is basically used as garnish in this dish, so felt I haven't missed mush in making it. Mangoes are now available all around the year in markets & if not you can get canned fruit to make this cool dish.

Prep Time-10mins 
Cook Time-15mins 
Serves-3people
Ingredients
1/4Cup sago
4Cups water 
Chopped mangoes & strawberries for garnish
For Puree 
1Big ripe mango cut into bite size pieces 
3Tbs sugar 
1/4Cup coconut milk 
1/2Cup milk 
Directions 
- Bring water to boil & add sago to it. Cook for 15mins to see the clear looking cooked sago. 
- Stain the water & wash the sago under cold water & keep aside. 
- Puree mango bites, sugar, coconut milk & milk to a smooth paste. Adjust sugar if needed. 
- Add in the sago & chill it for 2hrs or more.
- While serving garnish the mango sago with chopped mango & strawberries. 
-Enjoy this cool dessert.

Semolina Pudding with Strawberry Sauce

Valentine's Day is around the corner & air is already filled with lots of love. On time I got some strawberries to make the valentine's day tastier & colorful.
Semolina pudding is a traditional german dish. I added a little vanilla flavoring to the pudding to make it much more tastier. How I know that vanilla makes it more tastier ? I made it twice before posting it in this blog & the first experiment with out vanilla made it a little bland. The base dish "Semolina pudding" remains the same, but you can customize the sauce with your choice of fruit to make it more interesting.

Prep Time-5mins
Cook Time-20mins { For both sauce & semolina} 
Serves-2people 
Ingredients 
2Cups milk 
1/4Cup sugar
3Tbs butter 
1Tsp vanilla extract
1/2Cup semolina/sooji 
Few chopped strawberries & almonds
For Sauce 
1Cup chopped strawberries
2Tbs brown sugar
1/2Tsp lemon juice 
1/4Cup water
Directions
- In a deep pan mix milk, vanilla extract, butter & sugar. Bring them to boil on low heat. Then add in semolina little by little while stirring it. Allow the mixture to become thick. Switch off heat & keep aside.
Sauce
- Heat a pan with strawberries, water, lemon juice & sugar. Bring to boil & cook till strawberries are soft. Switch off heat & allow it to cool. 
- Grind it & stain the sauce.
-  Divide semolina in to 2 bowls & add in spoons full of sauce to it. Garnish with chopped strawberries & almonds or as you like.
Note
- Adjust the sugar as per your taste. 
- Semolina pudding might not be thick as soon as you cooked, eventually it gets smooth & easy to dig in.
- Left out semolina pudding can be refrigerated. When you want to have it, microwave it with enough milk & enjoy the pudding.

Mixed Fruit Yogurt Parfait

Yogurt Parfait
Parfait is one of my favorite desserts & it tastes delicious to me when made with yogurt. It gives me a satisfaction of eating healthy when I make it with yogurt rather than cream. I love pairing yogurt with different fruits & enjoy the goodness of them. Specifically the non-fat yogurt's are little sour in taste, will pair perfectly with fruits that are sweet. 
The mixed fruit parfait I'm sharing consists of simple ingredients like fruits, almonds, honey & Chobani non-fat greek yogurt. You can use any fruit in making this dessert or can go with your seasonal favorite fruit & enjoy it. 
Yogurt Parfait
Prep Time-10mins
Serves-2People
Ingredients
1Cup Chobani non-fat greek yogurt whisked to smooth consistency
1Whole tangerine / mandarin orange skin peeled & sliced to bite size pieces
1/2Cup pomegranate seeds
2Tbs honey 
2Tbs sliced almonds  
Arranging Parfait 
- In a bowl add a spoon full of yogurt. 
- Top it with oranges & little honey. 
- Layer it with yogurt & top it with pomegranate seeds. 
- Again layer it with yogurt & top with almonds. Drizzle some honey on top. 
- Parfait is ready to eat.
Note
- You can arrange the layers, as you like. 
- If needed chill before serving.

khabeesa ~ Omani Dish

Khabeesa

Khabeesa is a Oman breakfast dish served on eid days{acc. to wiki}. This dish is simple to make & delicious in taste. This is similar to the India puddings like vermicelli payasam, godhsambu payasam or the traditional kheer dish we make. You can get the flavors of cardamoms & rose water in every bite of this dish. Rose water always made me feel unpleasant when used in cooking. Thought this would be the same, but surprisingly I was happy with taste & smell of rose water in it. So below comes the recipe for Khabeesa, enjoy it.

Khabeesa
Adapted from here. Prep Time-2mins | Cook Time-15mins | Serves-2people
Ingredients
2Cups milk
1/4Cup condensed milk
1/2Cup sooji/semolina
1/2Tsp cardamom powder
1Tbs rose water
Few saffron string
2Tbs butter
Fried cashew for topping
Directions
- Heat a wide pan & to that add semolina along with milk. {If you add the milk at once semolina might crumble, to avoid that add little by little of milk while stirring semolina.}
- Bring them to boil & later add in condensed milk, cardamom powder, rose water, saffron strings & butter. 
- Mix them well & cook till semolina is cooked perfectly. Switch off heat. 
- Serve warm with cashews on top. 
Note
- Stir the pudding once in a while as it avoids forming lumps. 
- Sweet was just perfect in this dish. Add another 2tbs if you have a sweet tooth. 
- I fried cashews in butter before adding to the pudding.

Ebelskiver ~ Danish Pancakes

Today I'm sharing a breakfast recipe from Denmark. To know what my other friends are cooking, check out the Blogging Marathon page for the other Blogging Marathoners doing BM# 44.
Ebelskiver are Danish cute little puffed pancakes, which are made using a special pan to get their shape. This pancakes can be served as breakfast, dessert or also as a snack. You can serve them with jam's, flavored butter or can top with any of your favorite fruits along with dried nuts. 
The basic recipe of ebelskiver, which I got from a cookbook included eggs in it. I tried replacing eggs & it worked out fine in this dish. The ebelskiver is very similar to paniyaram pan you get in India. Here I'm sharing a eggless version of these delicious pancakes you will love.

Prep Time-10mins | Cook Time-10mins | Yields-18ebelskivers
Ingredients
1Cup All-purpose flour
3Tbs sugar
Pinch of salt
1/2Tsp baking soda
1/2Tsp baking powder
1/2Cup yogurt
1Cup milk
1Tsp apple cider vinegar
1/2Tsp cinnamon powder
2Tbs butter
Topping
Few chopped almonds
2Tbs honey
Directions 
- In a bowl sieve flour, baking soda, baking powder & cinnamon powder. 
- In another bowl whisk sugar , salt, yogurt, milk & apple cider vinegar until sugar dissolves completely. 
- Now mix in dry ingredients with the wet ones. 
- Meanwhile heat the Ebelskiver pan. Rub the pancake holes with butter. 
- Fill in the holes with batter completely. Allow the batter to cook. You can see a crust formed & the edges are well done. 
- Now use a skewer & turn them to the other side. Allow them to cook completely on other side too.
- Now repeat the same with left over batter. 
- while serving top the ebelskiver with honey & almonds. Serve them warm.
Note
- If you are adding eggs, then omit apple cider vinegar from the recipe. 
- Adjust the sugar if you want it to be on sweeter side.
- Topping can be any of your choice.
